ElasticSearch 7 Empty Categories

I’m using Magento 2.3.5-p1 and whenever I set ElasticSearch 7 (or any other version) as search engine, all my categories display empty.

When I set the search back to MySQL then my categories are shown correctly with the correct products in.

Any ideas?
